Salmon with Sesame Ginger Noodles

Serves 1


½ tsp coconut oil

1 skinless salmon fillets ( wild or organic)

1 spring onions

1 cm piece of ginger

2 tbsp soy sauce

1 tsp honey

1tbsp rice wine vinegar

4 cherry tomatoes or red peppers

4 mushrooms

1 courgettes, spiralized or slice with potato peelers to make long thin ribbons

2 tsp sesame oil

METHOD:

Heat oil in pan and over a low heat. Add salmon and cook for 4 minutes each side

Mix spring onions, ginger, soy sauce, honey and rice wine vinegar. Add to salmon in pan and cook for a few minutes.

In a separate pan, heat remaining coconut oil and add tomatoes and cook for 2 minutes.

Add the courgette and cook for further 1 min.

Make extra and reheat or have cold the next day !
